    Question About Clay Saucer

Many of this site talk about using the Brinkmann Water Pan as a replacement. When looking online I see there are two sizes of pans from Brinkmann. The first is 13 1/2" and it is called their water pan. Then there is a 15" that is actually the charcoal pan. Which one are you all using? About a...

    First Brisket....Here We Go

So this is the Brisket several hours into the cook. Looks great. Ended up taking the brisket off after 9 1/2 hours of cooking. It was probe tender at least an hour earlier but I just did not believe it could be done already. Flavor was great but it was a tad dry. So I had my first learn. I...

    need some questions answered

I think the 22" likes lots of charcoal. When I use mine I am always filling it up, 4 to 6 butts, and load it full with charcoal. I did 4 butts yesterday and had it held at 225° for 13 hours. I had the top vent open, bottom vents - 2 closed and 1 about a quarter open. I am always amazed at how...

What is everyone cooking this weekend?

It won't be this weekend but I am in the process of cooking 12 butts for work. 6 were done yesterday and 6 more today. I also have a Corned Beef Brisket I will be doing tomorrow. First time I have tried smoking one of them.

For people whom bought their WSM used.. How much did you pay?

I bought an 18.5" for $175. It was two years old but still in the box and never opened. I thought that was a pretty good deal.

    Cooking For My Work Peeps

Well it's a big weekend for us at work this Friday and Saturday so my manager asked if I would make Pulled Pork for the team. Of course I said yes. So after a trip to Costco I arrived home with 12 butts. Six went on the WSM yesterday and six more today. Ohh boy did they turn out great. I have to...

    Another CL Score

Already did the slot mod (as I have on all of mine) and will probably add some handles to the lower grate.

    Another CL Score

Guys, just keep looking. I had seen a few 18's but usually not for much of a discount. When I saw this one "New In Box" they were asking $200. Being that it had never been used, I felt that was a good price but offered $175 just to see. They immediately excepted. Probably could have bought it...

    Another CL Score

I kept hearing about all of the great deals you guys have scored on CL. So I kept looking around and finally found my deal. Today I picked up an 18.5" WSM. It is last years model, still in the box and got it for $175. Now I have Poppa Bear, Momma Bear and Baby Bear. Ohhh how I love the WSM.

    Amount Of Wood You Use

About a month ago I bought my first WSM 22.5" smoker and I absolutely love it. I have a number of very successful cooks (or at least my friends think it was terrific) under my belt but I have a question. When reading through the posts I see many folks talking about only using 3 or 4 chunks of...
