I belong to a MC that often will have parties with 200-400 people eating. I find that cooking the butts in advance and leaving them whole is the best way to go. Ill usually smoke around (8) 10lb butts the day before and wrap them in foil, let them cool, then refrigerate. The day of the party ill...

    2nd cook on my WSM

Today I cooked (6) eight - ten lbs pork butts on my new 22.5" WSM and learned a lesson... Next time doing so many butts I will put the smaller ones one the top grate with the larger down below because the lower grate was definitely cooking faster than the top grate. I'm assuming the lower grate...

    Cleaning procedure

What is the general consensus on clean-up after a cook? I typically clean the grates, clean out the ash and remove any food pieces that may have fallen through the cracks but purposely do not clean the interior of the kettle or smoker as I was told this was part of the "seasoning" of the...

    Hello From South Florida

I've been cooking with a Weber Kettle for years and started using it as a smoker about a year ago using every trick I could to keep the temperature down. Well I finally broke down and bought a 22.5 WSM and love it. Great temperature control and plenty of room for large cooks. I look forward to...
