How do you collect turkey drippings?

I know it's been a few weeks, sorry. I ended up using a 16"x2" aluminum deep dish pizza pan to collect the drippings. I did a 22lb bird and ended up using a pineapple juice can to stand it upright, the same as you would a beer-can chicken. That's the only way I could get it to fit in the...

How do you collect turkey drippings?

Weird, looks like my reply disappeared. I love this idea. Using this, I could use the same pan to make the roux, and still just as easily use the water pan to get a stock going with some wing tips and the giblets. https://www.amazon.com/exec/obidos/ASIN/B016ILHNS6/tvwb-20 Thanks for the idea!

How do you collect turkey drippings?

I had seen that thread in a search but read down a little more about actually making the stock in the water pan. That's an excellent idea. I'll try that. Putting SOME liquid in the water pan would definitely help prevent these juices from vaporizing.

How do you collect turkey drippings?

Hey guys, I've been gone for a while. Sorry for being such a stranger. The weather around these parts is becoming cooler and lending itself to much more favorable smoking conditions compared to the 115+ degree days we've been seeing this year in Phoenix! 'Tis the turkey season. I've always done...

    Smoking bone marrow slices

Thanks for the boost of confidence, Frank. I'll let you know how it goes. I've never made a Prime brisket before. Found a good deal on a 9lb whole packer Prime brisket the other day, and it's going on tonight at 12AM sharp, with some short ribs and these marrow slices.

    Smoking bone marrow slices

I've always wanted to marrow, and now the time has come. I picked up some good quality (but still frozen..) marrow bones from a new butcher down the street. They're sliced short, not lengthwise, from 1.5"-2" thick. The plan is just to put them in an aluminum pan on the top rack and see how...

Hi, I'm Dan, and I like smoke.

Quick and easy, right? After struggling for years trying to find the best apparatus to appease my smoky palate, I recently discovered the WSM and it changed my life. I now have to take two showers a day: one in the morning, and one after getting a smoke started. My girlfriend sure does enjoy...

One-touch cleaner from original Kettle for WSM?

I have a 22" Weber Kettle that I recently put a new one-touch cleaner in to. You know, the handle on the bottom which rotates and scoots ash and unmentionables in to vents on the bottom to clean the kettle out Weber 7443 18-1/2-Inch One-Touch Cleaning System Kit for Grills...
