    Brisket Wrap question

    Thanks for the responses. Total cook time was 14.5 hours, I was especially pleased with the first effort with brisket. The flat was just a tad dry. I pulled, let sit out for about 35 minutes and the wrapped for only about 30. I will be more patient next time. Thanks for the responses.

    I just received the gasket kit for my 22.5, do you have a recommendation for a powerful food grade degreaser? I have quite a bit of cleaning to do prior to installation. I want to ensure a secure fit.

    Brisket Wrap question

    I posted this in another forum and think this may be the correct place. When a brisket reaches the prob tender stage do you pull and instantly wrap, or let cool to 160 then wrap? I will post pictures tomorrow but I went all in on a 13lb prime from Costco. First attemp at brisket. Fingers...

    For those who have the compression latch.

    I did not add a gasket with a cajun bandit door and compression latch. Appears to be a super tight fit without gasket. Zero smoke or heat loss.

    Wireless Thermometers for WSM

    I recently purchased have the Maverick 733 to go with the new WSM 22.5 I received at Christmas. So far I have been fairly pleased with the ease of use, accuracy, and range. It does feel a little cheaply built and I wish it had an IPhone compatible app. All in all a solid addition.

    New to the Club

    Thanks for the warm welcome. I have been reading threads on this great forum about all aspects of smoking on the WSM. The knowledge and ingenuity on this board are amazing. Assembling everything right now, extremely pumped. I will figure out the picture posting and add some tonight.

    Been browsing this forum for several months. As I sit here, a freshly delivered WSM 22.5, Maverick 733, new CB door, special charcoal ring + latch sit ready for assembly. My wife is on board, I am truly blessed. Pictures to follow as I hope to break it in this weekend. This forum is amazing...
