Using harwdood only in your WSM?

Thanks for all the input! I will say that although it was a challenge to get the wood burning to a point where I could keep the temp I wanted, once I did get it there, I actually had great results with my finished product. It was something that I had wanted to try for a while. My biggest...

Using harwdood only in your WSM?

I smoked a corned beef/ pastrami slab this weekend using only cherry hardwood. Had a trouble keep the temp just right at first. The cherry would light up to a raging fire if I opened the front door, then would pretty much get snuffed out immediately when I closed the door. Finally got some...

Do you remove hard plastic clip holding legs together?

Jeff, I have always removed that clip, not sure having that plastic inside a 350 degree oven/smoker would be a good idea. Happy Thanksgiving!

    Chris A's beef ribs

Dave & Mike, Not sure if either of you ever get to the NW suburbs, but I have had pretty good luck @ the Corborns store in Elk River. They usually have a few beef ribs on the shelf, and once or twice a summer I even stumble on a couple packs of "dinosaur" bones. IMHO better than pork ribs.

    Kettle pizza oven

The last time I tried Papa Murphy's on the grill, the crust was so burned that we had "pizza toppings in a bowl" for dinner!!

    It must be my fault?

Thanks so much for all the input. I will make sure that the next one stays on the smoker till at least 195deg. I will also use a stronger smoke wood as suggested. You guys rock!!

    It must be my fault?

Phil & Anthony, When I checked the temp and it registered 185 with my thermopen, it sure seemed tender as the probe slid in with little resistance. I used about 10 small chunks of apple. I might try a little stronger wood in the future. I foiled and rested the butt for about 45 minutes. Do...

    It must be my fault?

So, 2 weeks ago I did my first ever pork butt. It was a 4lb. "enhanced" butt from the local chain grocery store.I smoked this butt on my performer and I must say, it might have been the single best food I had ever tasted. Juicy & smokey heaven is how I would describe it. Because it was sooo...
