Your toughest grillin'/smokin' challenge?

What was your toughest cooking challenge when you first started out? Mine would have been trying to smoke a brisket for the very first time. 13+ hours into the cook I began to think it would never be ready.

I agree with you completely, Rob. The first time I tried cooking brisket, I put it on the smoker at about 9 p.m. When I woke up the next morning, it was as stiff as a book. Fortunately by lunch it was reasonably tender, but every brisket I cook has a mind of its own. I am still learning how to get it just the way I like.
