Why you shouldn't smoke cheese on a beautiful day

I really have had great results with smoking cheese this year. I had some cheese in the refrigerator that I had bought during the cold weather but didn't have time to smoke. Not wanting to waste it, I decided to smoke it today. We have had a beautiful day here in Georgia with the temp going into the 80's. As you can see from the picture below, this is why you should only smoke cheese in cold weather. By any measure, this has to be classified as an epic failure!

BTW - I am still planning on putting everything that stayed on the grate it in food saver bags. It might be ugly, but it still tastes great.

That sucks!! I have been told not to let the smoker get above 100*F, so the cheese won't start to sweat. I have added ice to mine to keep the temps down, just don't let the condensate drip on your coals and even have soaked some towels in water and laid them on the lid to keep temps down.
