Weber 310 natural gas

I just restored this grill by replacing everything but the lid! I let the grill get to 600 degrees before grilling. I'm not setting the sear or "grill taste/flavor" that I'm used to. If anyone has and suggestions it will be greatly appreciated.

310 genesis could be a side control or front control. Or do you have a spirit 310?

Welcome David! Maybe the grill is too clean now that you replaced everything and you're just not used to it?

Are we talking natural gas? Pellets? Propane? Charcoal?

Yeah the newer spirirt 3 burners only get 30k btu, simply not enough btu per square inch
