True Grits with Cheese

8 cups water
1/2 tsp. salt
2 cups stone-ground yellow grits
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
2 TB. butter
pepper

In a pot, bring 8 cups of water and salt to a boil. Add grits slowly, stirring constantly to prevent clumping. Keep the grits boiling until water reduces.

Reduce heat to simmer. Stir in cheese, butter and pepper until well blended. Simmer on low heat for 20 minutes, stirring occasionally. Top with a little extra butter for a little extra flavor.

Come to think of it, I have re-grits every time we have leftover grits. We keep them in a quart plastic soup container, then a few days later, they get sliced and fried up for another breakfast. Re-grits lol!!(hope I don't regret posting this-lol)

I have no re-grits.... that, right there, might be another problem.

I just love good grits that have been chilled, sliced, sauteed to caramelize, and served with your favorite barbecue sauce, alongside your favorite smoked meaty goodness. That recipe looks like it might almost have enough cheese in it.

Hmmm, never thought of putting anything other than butter on them, will have to give it a try, thanks.
