Tri Tip Sous Vide

I haven’t posted a cook in quite a while. I decided to hot tub a Tri Tip at 135*F for 5 hrs then sear it off/ get some smoke on it on the kettle via a mesquite/charcoal fire. Used Cajun Shake in the bath then hit it with Montreal Steak Seasoning for the sear/smoke. Served simply with horseradish, beans, and Stout. Cheers!

Looks like you nailed it, Dwain! I haven't done a SV TT in quite a while. Time to fix that...
 
That looks excellent, Dwain! I love to do TT's this way, especially on a weeknight. I can drop it in the bath when I take a break for lunch, then it just needs some grill marks whenever we're ready for dinner. No fuss, minimal muss, and oh so good!

I assume that's your stout? I do miss my Vanilla Oatmeal Stout that I used to make......it was an Imperial, though, so making 5 gallons disappear always took a while! ;)

Tri-tip is one of the favorite things I have learned about here on this site, and I love this cut. It is really hard to find around me so when I find a random single tri-tip sitting there in the meat section, I grab it up and cooking it feels extra special. I spent some time today looking at different options on how to cook the one I just scored this past week. Your's looks perfect, I love that sear and I really like the level of doneness.

@ Rich: yes I brewed the Stout. This one is based on Left Hand’s recipe. I added cacao nibs for a deep dark chocolate vibe. This keg will disappear fast.

@ Cliff: I’ve been lurking and might throw a quick comment in the ring. Still cooking just not documenting them much.
 
Love it! We FINALLY got good tri-tip in Central Arkansas thanks to Costco, and I have been having fun with it. Doing one on Saturday for a Christmas party. I'll probably do 135F for 6 hours, then a quick sear on the grill. Did one for Thanksgiving with the in-laws, and they loved it.

Didn't realize there were some fellow homebrewers here. Been brewing for almost 15 years now.

Looks great!

Gonna have to try the Sous Vide function on the Instant Pot & see how well it does.
 
Started in '92 and gave it up about four years ago. Still trying to rid myself of all the gear I collected! :)

Know the feeling.
I downsized from a 3-vessel propane fired system to an all in one about 3 years ago. Got the old system, an extra kettle, MLT and various fermenters and misc. gear. Need to get it all cleaned up and see if I can find a buyer.

Wild fork has prime tri tip for about $10/lb I also just sous vide and smoked one on the WSM yesterday

My (and my daughter's) love of this cut has only increased since my post. I have been able to find them locally more regularly, but my family also got me a prime one from Wild Forks for Father's day. It was really good. Promised my daughter I will look for another Tri Tip tomorrow.


Here is the only one I have got locally that was close to the quality of Wild Forks.
