Yes, supposedly taking the temperature over a range on the probe.Gives a more accurate overall temp. You will find the probes on wireless systems to generally be a lot thicker than wired. They have to house the bluetooth electronics.
That makes sense. Thanks! If I can live with the gaping hole that the rotisserie leaves in roasts, then the holes left by those probes won't be an issue. I'm itching to give them a workout if the rain holds off this weekend.
 
I broke it in today and am very impressed. Set up was easy and something that I overlooked is the it displays the cooking temps as well, eliminating the need for a separate probe at the grate.

Well I had a ravenous crowd here. Smoked it until it had internals (in the thick end) of 125. Cranked the heat up to 350 and removed the aluminum pan I had under it. Allowed it to come to 130-135. Pulled and rested. Well the hungry crowd devoured every last bite. And it truly was incredible. Juicy, fork tender. Actually came out more tender then filet mignon. Sorry I did not get photos. I was cutting too fast and too often :D
And the Thermomaven worked incredibly well
