Stuffed loin for Saturday dinner!

I was expecting another hearty appetite for dinner but he could not make it so, there was a lot to enjoy!IMG_1442.jpegIMG_1441.jpegIMG_1440.jpeg

Stuffed with spinach, caramelized onion, mushroom, fennel fronds(very light flavor before you guys grumble) splash of port cheese and breadcrumbs enough to “tighten” it up.
Herbes de Provence zest of a Meyer lemon juice of half. Single string trussing, Operation Barbecue Relief sweet and Smokey!
Indirect, about an hour, pear for smoke.
Sides were “Moros y Christianos” and green peas. Nice dinner by the fireplace!
 
Thanks Richard, I said that to a baker as he assembled my sisters wedding cake.
He very nonchalantly kept piping frosting and said very coolly “Art nothing, it’s work!”
He retired passing the business to his son in law who closed it after almost 40 years of being up at 03:00 on a concrete bakery floor. They closed two Christmas eves ago, I’m so sad about that.

Compared to most of you, I’m a hack!
I suppose I should practice my photography as well as plating style. Wife gifted me a new digital camera for Christmas, I learned BASIC photography on film, the technology, puts me at a loss in many ways. I suppose the smart thing is get batteries charged up and start shooting, the digital wastebasket is pretty handy! I had a conversation with a professional (and father of a very good friend) who reminded me of the old saw “ difference between a pro and amateur is the size of the wastebasket!”
Sadly, the man is in serious decline and (at 90+) he can’t answer some of the questions he has asked before.
I’d love to have had him shoot pictures of some feasts but, he no longer plays in that pool much. He was/is a great guy.
Great sons and daughters and about as lifelong friends as I expect to ever have! God bless you,Lynwood!
 
I failed to mention, the crumbs were “crumbed” Chex party mix. Nice seasoning with good use of products? That works very nicely on chicken too! I love my Cuisinart!
