Did two racks of Spare ribs from Costco, total weight before St. Louis trim, 9.6lb. Used Minion method (first time, great Jim) put on WSM at 10am took off at 3:45pm internal temp 186-190. One rack falling off bone the other just enough pull to come clean from bone when eaten. Sauced last 30 minutes with Sweet Baby Rays Original. Average temp 250.4 at lid 240.6 at top grate. EXCELLENT!!!!!!!!!
