Looking really good, Chuck! I've got some p-tenderloins, maybe I'll take a cue from you and spin 'em. Not sure I've ever done that...... The flap meat tacos look super tasty! I'm not feeling super optimistic about our Giants (again), but at least you can have some good food while you watch!

You need to. Just my opinion, but the rotiss is one of the best ways to cook an inherently lean piece of meat because of the equalization factor.
