Smoked Cheese-how long is it good for?

I smoked some cheddar, Gouda, Fontina & pepper jack cheese on Monday night with some apricot wood.

I vacuum sealed it and placed it in the fridge to wait a week until it's mellowed out a bit.

My question is, given the type of cheeses & the way they are stored, how long will they be good for?

We'll start eating some of it on X-mas Eve, but it will take a while to finish the rest.
 
Usually several weeks to several months, depending on the cheese (its moisture content), whether any cross contamination occured and the seal. You can extend by freezing.

I guess that brings up another couple questions for me then. If I vacuum sealed the cheese, will that prevent the cheese from drying out in the freezer? How long will it keep in the freezer?
