SMC Arrived!

Yea, my SMC arrived and I fired it up for the first time Friday evening. Everything went good, but had a little hickup during while I was sleeping. The wind kicked up and my SMC temp rose a little high (160) before I caught it.

Anyhow, my brisket came out great! Much better than when I use to make it on my gas grill (and it was a lot easier with the SMC). Now I just have to find a rub that I really like. After a year of cooking briskets, I haven't found it yet.

Started some ribs today. Had a little temp problem early on after I put the meat on... the temp crashed. I think I have it back on track now.

Anyhow, thanks to everyone for all the great tips. I think I've read through this forum several times!

Chris, this website is a great resource and thanks and influenced my decision to by the SMC! I debated long and hard about what kind of smoker to buy and I love my new toy (and so does my wife)!

Welcome to the club!
Bought my WSM a few months back and have fired it
up every weekend (at least once!) ever since.
I finally have a hobby and a good excuse to sit
out back and enjoy my favorite beverage and eat some
of the best food I've ever tasted.
