So my wife brought home some thick sliced (maybe 1.5 inch) pork belly from Costco. How do I cure/smoke this to make bacon?

thanks
Dave

What’s the total weight? I did several hunks that equaled 3 lbs once. Mixed up the cure for 3 lbs. rubbed it, put it all in one bag together and cured. Worked well.

Got some choices with it cut like that. You can cure it and make it bacon. That will work well if you’ve got a slicer or are good with a blade. Or you could make pork belly burnt ends or just bbq pork belly.

My concern was more about how long to cure it. Seems like it would take less time when cut up. Don’t want it to be too salty to eat but also want it to be safe to eat.

Personally, I would enjoy it some other way besides curing. Lots of recipes online for pork belly strips that are uncured.

Easier to cure a whole piece of pork belly then smoke it and slice it. Lots of info in our Charcuterie Forum on makin' bacon, including the super-popular thread Bacon Made Easy...it's only been viewed 184,000 times! 😲
