Our favorite - pepper jack and cheddar together. We also like Gruyere as well (with mushrooms).

Emmental or thinly sliced Cambazola.
The slight piquant hit from the Cambazola is a nice compliment to the burger.

Well, had my cheeseburger today. Can't tell you what kind of cheese, DH bought it at McDonalds on his way back from grocery shopping. lol
