Rub help

Just finished another successful Minion cook on an 8 pound picnic. Came out great, but I never am happy with the flavor of my bark. I just can't taste my rub! This time I rubbed more liberally ( I'm apparently not using enough--does the rub interfere with the smoke getting in?) and this rub was a home made concoction heavy on the peppers that definately gets your attention when you try it plain. But not noticeable on the taste of the bark.

Should I rub even more, maybe actually coating the outside...will mustard hinder smoke absorbtion?

I like to put on heavy coat of rub on butts or picnics. I use about a 1/2 cup of rub per 7-8 lb picnic. I also remove any skin on the picnic so I have more surface area for the rub.

I don't use mustard anymore. I found that I could not tell enough of a difference so I quit using it. When I did use it I didn't notice any problems with it hampering the smoke flavor of the finished pork.
