Roasted Hatch Chiles

The local Von's has a small produce section for this year's batch of Hatch New Mexico green chiles.

Last year they had a whole island stand, but in talking with 'my produce guy' he said they just didn't sell and had to toss out a lot!

The chiles are marked as "mild" - so decided to give them a try.

I picked out 6 chiles to roast for green chile burgers tonight.

On the grill, direct flame, 550F to roast, then rest for 20 minutes in a double paper bag

Peeled, cored, cleaned and ready for dicing

Chef's tasting notes: great flavor! Nothing like fresh roasted Hatch green chiles - but these are not mild. I grew up in NM and I'd say these are a perfect medium hot!
 
I like hatch chiles also but have to go with the mild my meds and spicy things don't play well. Last year Barb brought home a bunch and got them to the stage you did just before dicing them. I put them in food saver bags and I still have some, they held up very well living in the freezer for a year.
