method #1- (chef john) set out meat for 4 hrs - fire up oven to 500 degrees and calculate based on weight how many minutes to cook then turn off oven and let set for a few hours for under med rare


method #2- reverse sear


or is there a better option out there? Im thinking reverse sear but people rave about method #1
 
#1 works well if your oven is really tight, it’s an old Craig Claiborne recipe from the New York Times in the 50’s.
It’s certainly simple, great results.
I am doing one on the kettle tomorrow, about the same size.
Today is Hoppin Johns, and ham maybe some sort broccoli cheesy something or maybe just peas! Feeling quite lazy today.
