Pork steak, peas, and corn bread

I haven’t posted a cook here in a while so I decided to remedy the situation. After yard work, my thoughts for tonight’s supper turned to Pork Steak, Black Eye Peas and Corn bread. Of course Pork Steak makes me think St Louis and St Louis makes me think of Bob.

The beer is my rendition of Moose Drool

I don’t have Maull’s or Gates so i subbed in Bullseye.

I seasoned the steaks with SPOG and used Royal Oak in this cook.

First, i seared them off like the ribeye i grilled Sunday. Then i placed them into a bed of BBQ sauce and covered them with the rest of the bottle. I let them percolate until a wood skewer slid in like a hot knife thru butter. Zero resistance.

I rendered some bacon and sautéed half an onion in the fat. I added a bit of SPOG and some hatch chilis. The peas went into this concoction for a slow simmer.

The corn bread was from a box that I added corn, cheese, hatch chilis, half a stick of butter and a touch of sugar.

Great looking plate. My late father-in-law used bullseye original and he doctored it up to make his own creation to make amazing bbq chicken thighs. I made my attempt at his bbq chicken last summer and my mother-in-law was really pleased with the attempt.
 
We love pork steaks I have yet to do the sauce bath but that is coming our table soon. Excellant plate shot, Glas I just ate....
