Pork Rib Trimmings

I have a bunch of trimmings leftover from a couple of racks of pork spare ribs. Probably should have put them on the lower rack of the WSM when I did the ribs but I didn't think of it at the time. So, I'm wondering, If I wrap them in some foil with some worcestershire and rub and bake them at 250 degrees in the oven, and then cube them to use in some chili or baked beans, will that work? I can also freeze them to drop in later, right?
 
I got 3 racks I'm trimming for a 24 hr sous vide and a smoker finish tomorrow.
I would smoke the rib-tips first and the flap meat. adds that extra layer of flavour.

Thanks for all your input. I just braised them in the foil with the sauce and the rub and then cubed it and froze it for Stew or chili. I thought about sausage but there wasn't that much and I've never made sausage before even though I have a meat grinder for the Kitchenaid. That's a future endeavor, want to get a foundation with all this BBQ technique and stuff first.
