Pork Chops on a Rainy Night

About two hours before my cook it began to rain, I mean like a cow on a flat rock. Quick Vid. I thought about bringing it indoors as I'd already marinated the chops for 8 hours, but naaah, not in my DNA. My canopy worked out well as there was no wind with this storm, just got a little wet and cold going to and from the canopy. No big deal. Didn't dilly dally however and only took a few pics. Here we go.

As mentioned, marinated the chops in minced garlic, brown sugar, honey, soy sauce, rcestershire sauce, ketchup, ground ginger, onion powder, cinnamon and cayenne. I only used half for the marinade. Split the remaining half and used enough to use as a baste during the cook and the remainder I reduced to a thick consistency and topped the meat after it was plated. Delicious!

Gold potatoes and sliced carrots with oil, salt and pepper, chopped fresh thyme and dried oregano.

That marinade sounds tasty Cliff. You are wearing those grill grates out, I guess you like them. I've been trying to convince myself I need a set, might just have to pull the trigger.
 
Thanks Pat. Yes, I really do love them. I was skeptical for a long time and finally caved and put them on my Christmas list. I got the brush also as they are a bear to clean.
 
Those Chops look amazing Cliff. I have no luck cooking them over charcoal or even wood. I can only gas them, and they never come out looking like yours
