Doing pulled pork....put it on at 6:45 am for BBQ at 4 PM. Gonna do it at 250 and foil after 5 hours. Filled the water pan and using standard method with apple and pecan chunks. I expect to refuel 1 or 2 times...also coffee before beer....

Bout 3 hours in. Had to add fuel to keep temp up. It spiked then came down to where I want it. Should help to set the bark...

I hope it's done in time. That's only 9 hours (without resting) with a 'medium' temp and a full water pan.

Yes, forgot to mention I am gonna foil it...trying a bit of the Harry Soo method...hopefully will braise to temp in time, otherwise will just eat later!
 
Looking great! I did 2 7 pounders over night. Started at 10 pm. No pics. Too busy. They turned out awesome at about 10 this morning. Having them soon.
