PERFECT Smoked Bologna on the Kettle

Things worked out really good after the heat came up on the grill. Oak and Pecan.
The rub was perfect...Sweet, and then a little heat on the end. Did not use a binder. Glazed w/ Sweet Baby Ray's Brown Sugar & Hickory.

3/4 Cup packed Brown Sugar
2 T Montreal Steak Seasoning
1 T Kosher Salt
1 T Chili Powder
1 T Garlic Powder
1 t Cayenne

Toasted Texas Toast, 1/2" slice of bologna, cheese, Carmalized Onions, Hamburger Dills, splash of SWB's

Looks great, I'm diabetic so have to skip the sweet stuff, I cut slices in mine about 1/2-3/4" deep and hit it with mustard and a rub, wanting ribs today but now want to throw a log of baloney on too lol. I take my lunch to work most of the time and the SB is a favorite of mine.
