Got a massive T Bone
. 2.5 pounds and prob 2.5 inches thick. Prepped some compound butter on Thursday.
Incredibly warm by the river.
Steak had a long brine in the fridge. Focaccia was prepped
This was a traditional steak meal with mushrooms, spinach and bread. Did the steak on the kettle with a good sear then moved to indirect. 

Onions!!!
Took the steak to about 130-135

What a spread of goodness. Even went with a heavier red than normal.
