NY Strip on the Afterburner

I was home alone for dinner last night. So despite some insanely high winds, I wanted to cook a steak over the chimney. Found a nice NY Strip at Wegmans the actually looked better than the Prime grade Strip it was sitting next to. I rubbed it with a little Dizzy Pig Red Eye Express and put it in the Sous Vide bath for about 3 hours. Seared it on the afterburner and served w/ Caesar salad and a nice Washington State Cabernet. Good stuff.
