In anticipation for the WSM 18 to arrive I decided I might want to get a good last smoke on the GENESIS.
10.lb pork butt, 20 hours cook time (good thing outs natural gas) wood used was hickory and Apple.
I couldn't decide what sauce to use so who ever wanted sauce they could choose or... Go all natural with no sauce.
Buns used but didn't take a pic was Dave's killer bread white buns.

Yeah, I wanted to cook it straight through without wrapping it. If I would have wrapped it I would have easily cut cook time. Temp was around 225-240 outside thermometer. This was more an experiment to see one how long these take to get through a stall and how it taste not wrapping it. I couldn't believe it, the stall was there for a few hours. Good thing I started the day before .

That came out great, nice cook. We have a sidewinder E320 NG love the thing. It's our summer oven so we don't heat up the house using the indoor oven. from baking potatoes to making lasagna it can pretty much do anything the indoor oven can do.

Lasagna now that is something I'm curious about. The only problem when cooking outside because you don't want your house to get hot is.... you go outside and its hot out there :( can't win to lose. you know.
