I showed DH some Tex-Mex recipes I cut out of one of my cooking magazine. 5 of them out of 7 he said to put in "Make This Week" folder. Yeah, sure. lol We shall see. 
Of the 5, this is one I hope he does make.
Mexican Deviled Eggs
8 hard boiled large eggs
1/2 cup shredded cheddar cheese
1/4 cup mayonnaise
1/4 cup salsa
2 TB. green onions, sliced
1 TB. sour cream
salt (optional, or to your taste)
Slice eggs lengthwise, remove yolks and set whites aside. Mash yolks with rest of ingredients, then stuff into egg whites.
