Lemon Chicken Ragout

1 whole chicken, approx. 1.5kg
5 sprigs of thyme
3 sprigs of rosemary
2 tbsp salt flakes
1 tsp fresh ground pepper
2 organic lemons
4 cloves of garlic
4 carrots
2 parsnips
3 turnips
200ml white wine
5 sprigs of parsley
Olive oil

I have made this recipe twice now and love it. I added oil to the rub to make it more of a paste. Also, I used pieces (2 breasts & 2 thighs) instead of butchering a whole chicken. I am not a person who likes many vegetables, but I have been trying to broaden my horizon. I was surprised how much I loved the parsnips and liked the turnips. If you are into root vegetables, this recipe is for you. It's just my wife and I, so I cut the amounts in half.
