Kettle clams

The wife and I took the dogs clamming yesterday.

I soaked them on a strainer in a bucket of sea water with a dual bubbler on the bottom to remove the sand.
Doing this bubbler soak has always removed all of the sand, more so than any other method I’ve tried.

This was a simple kettle wok clam cook served on linguine with an Alfredo souse & clam juice and garlic bread for the dippings 😋.
I did run several large chunks of smoke wood to get a smokey flavor and that did work better than not.

I love clam dinners and this one did not disappoint.

This was an 80 count harvest of Manila /Little neck clams (2 limits) also known locally as steamer clams.
They were more than enough for 3 people with big appetites if contemplating serving amounts.

Dan, this is one of my favorites too.
 
Andy, didn't you also get your hands on geoduck clams before? I would really like to try those someday as I heard they are as tasty as scallops.

One of the Italian restaurants i used to go to had great linguini alle vongole, but they took it off the menu.

Even though I saw it was missing on the menu, I ordered it anyway. The server didn't blink when I ordered it and it arrived delicious as always. On the bill the cheapest pasta dish was charged, and yes a generous tip was given.

I enjoy digging for geoducks. It’s hard work because they are deep but fun because I do that with with friends and we take turns in the hole. I like them probably more than jumbo rock scallops because they are not as available. Most of the easy digs on public land have been picked out so it normally takes a boat to get to the best areas.

They take a long time to mature. I’ve been planting some on our land but I can’t harvest mine for a while.
The state plants steamers clams, oysters and geoducks for people to harvest so we like hitting the public lands for them with our dogs for certain species.

You can't get much fresher than that!

That looks like a wonderful day! That’s one of the things I miss about not living on the coast (ANY coast) quality of seafood is just not as good even in the great state of Michigan! There is nothing better than something that has not been put of the water more than a few hours as opposed to the 36+ that it takes to get here.
