Horseradish Potato Salad

I picked out 3 potato salad recipes that looked and sounded good for the 4th and let DH pick the one to make. This is the one he chose.

Horseradish Potato Salad

4 large baking potatoes
1/2 cup mayonnaise
1/2 to 1 cup sour cream
2 TB. prepared horseradish
1 TB. chopped fresh parsley
1/2 tsp. salt
1/2 tsp. freshly ground pepper
4 hard-cooked eggs, chopped
3 bacon slices, cooked and crumbled
2 green onions, sliced

1. Peel potatoes and cut into 1" cubes. Cook in boiling salted water to cover 12 minutes or until tender. (Do not overcook). Drain and cool.
2. Stir together mayonnaise and next 5 ingredients in a large bowl; and cubed potato, egg, bacon and green onion, tossing gently. Cover and chill. 6 servings

DH made this for the 4th, very, very good. He hard-boiled extra eggs and put some in a jar of pickled beet juice and cut a couple up into the left over potato salad. It was really good.
 
My wife curds her recipes....but she does a hot carrot casserole with horseradish that's sounds similar to this. the horseradish and sweet carrots work well together.
Will have to try your potato salad.
