Hanging Ribs

On Monday I'm going to try out the expandable cooking rack I received for the first time and try hanging some St. Louis trimmed spare ribs. I have a couple of questions for those of you who may have
used this method:

1. Do you still install the empty/foiled water pan to catch drippings? or will the ribs hit the pan while hanging?

2. What temps did you cook at, I'm shooting for between 250-275; how long of a cook should I expect? I've read on the PBC that the ribs tend to cook a little faster than normal.

Any other hints or helpful suggestions are appreciated.

Hi Bruce, I have hung ribs in the drum smoker several times and usually go 275 -300, no water pan, and they have been ready in as little as 3 hours and up to about 4 hours max, with no
foil, no 3-2-1. Can't say whether they will hit the pan in your WSM but if they do, just hang 1/2 slabs. I always try something new at just a slab to experiment and then do more when
I get it all dialed in. Enjoy.
 
What's an expandable cooking grate? Do you mean rack?

No, it defeats the purpose of open pit cooking.

How do you plan on measuring temps? If you cook them at 325 they'll be done around 2 hours and be amazing.
