Grilled Shrimp

My wife wanted grilled shrimp for dinner and I never considered taking pictures as I cooked. When everything was plated, she asked for a picture to show her girlfriends what I had fixed her for dinner - so I decided to post that picture.

It is grilled shrimp (marinated in tequila and spices), roasted beets, and polenta with mushrooms and onions.

Ray if that's the Weber recipe for the shrimp, Ive used it and it's a winner. Yours looks awesome and I like your sides!

One of the few things I miss about being stationed in Biloxi, MS are the fresh shrimp right off the boats!

Jim and Clint,

I love roasted beets. I wash them and leave the peel and root end intact - just cut off the stalks. I lightly rub with evoo and wrap in foil and roast at 400 degrees for about an hour. You can seal up the foil, or just leave it cracked open. I sometimes use garlic flavored evoo.
