Grilled Baby Back Ribs

Yep, GRILLED.
we were in Wautoma last Sunday, planning on being home in time to smoke a FAST rack of baby backs...
but we arrived 90 minutes later than I expected.
so, I decided to GRILL my ribs

used a FULL Weber charcoal chimney of new Kingsford
tossed that once lit to one side of the Weber 26"OTG grill.
foil on the naked side.
seasoned the ribs with EVOO, kosher salt & pepper then
sprinkled all over them with Penzey's California Seasoned Pepper

oh yeah, one large hunk of APPLE wood on the hot coals

The dome therm temp was an average of 400ºF... peaking at 425 or so.

after 30 minutes or so, I flipped the pork

lettem sit for a few minutes, then wrapped'em in foil for 20 minutes.

after the wrap, I placed them OVER the heat

...then off to the side for a few more minutes.

after a total of 1 hour and 25 minutes, I felt, These Ribs Are Done.
So I took'em off to rest for bout 15 minutes uncovered.
Then sliced them...

They Were GREAT! Moist! Meaty!! Flavourful!!! Some of the BEST Baby Back Ribs I've EVER Cooked!

That's a speedy rack! I have never gone that hot and fast but may give it a shot based on your cook! Thanks for sharing.
 
I used to do HH ribs all the time on my ECB gasser. Now that I have my WSM, that's what I use. But those look pretty durn good!@

Honestly, I was just wingin' it and thought, what the hell, if they'll bad, I got a frozen pizza!
I got lucky and they worked out well!
If you try this, and again, I will, I hope it works well for you too!
 
Jim that is very interesting. And judging by your review the old low and slow rule is not necessary. They sure do look moist and wonderful.
 
Nicely done Jim. That's actually how I think babybacks should be done. The best ones I've made have always been hot and fast. And the ribs you just made look perfect!
 
Great looking ribs Jim! That's how I always cooked them before my WSM's arrived. Really like to go back to the grill now and then. Love dry rubbed ribs also. Very nice.
 
Jeeez- um ! those look nice. ive done ribs on the grill a few times and i like them a lot.

Great looking HH ribs Jim. Seems like a lot of members are doing HH ribs all of a sudden, going to give that method a try.
 
Jim that looks delicious and I like the shorter time cook. We have a couple of racks on hand and will be doing this real soon, Thanks for sharing this with us.

And I laughed when I saw the owner's manual for my new kettle said to cook rack of ribs 1.5 to 2 hours with indirect medium heat. Who knew?
