Follow-up question on Cooking butts and briskets together

Can I put more than 1 butt and brisket in at a time (2 butts and 2 briskets at the same time) and if so, would it be difficult to maintain 225-250 temperature?

Sure you can. I did four butts in my WSM this past weekend. You want to be careful that you don't have it so full that you restrict airflow and have temp control problems, but you should be able to get multiple butts and/or briskets on (whole briskets are big, so, you might be limited to two without having to get creative....I haven't cooked any briskets on my WSM yet.)

A friend of mine literally stuffs his. I've seen him put a brisket, a butt, 3 slabs of ribs a 3-4 lbs of sausage at one time on his. In fact they more meat you can put on the more moisture there is. You will have to move things around a little and it may take an extra hour. But it works great.
