This is my Google review of Terrell's BBQ, very near the regional Gainesville airport. If you can separate out in your mind competition BBQ from what you actually want to eat as your meal, this place is a refreshing change and really good.

Deserves a full 5 stars. I ordered the rib dinner which was unctuous, smokey and flavorful. It was described as 6 bones but actually, the Pitmaster has chosen to split the full spareribs lengthwise in half, a thick rib with a bone in the middle and a thinly slicer rib without the bone. Very interesting technique. I love these thin rib morsels.

I asked for the sauce to be on the side so I could appreciate the sparerib alone. And for the record, the rib is excellent on its own. The meat between the cartilage is tender and slightly underseasoned so you can taste the natural sweetness of the pork. My guess is that the ribs are cooked indirectly with no wrapping. The smoke ring is visible on both sides.

I gotta say as good as the rib is, it is even better with the tangy red sauce. I love tangy sauces and this is rare where I am from. The rib sat on top of a soft slice of white bread that was good for dipping in the sauce I couldn't get enough of.

The Mac and cheese, recommended by the person taking my order, was rich, salty and lovely. It was not drenched in cream or sweet. Thank you for serving something for adults.

The collard greens were slightly bitter, earthy and not too salty, the way collards should taste.

I asked about the pit and she said they cook offsite and bring the bbq in. The person that took my order was really nice and accommodating of my questions. I made sure to give Terrell's a generous tip because I want to ensure that we dont lose these small Mom and Pop BBQ stands.

I ate two bites of a rib before my plane departed and finished the entire meal at the next airport, waiting for my flight to a BBQ contest in SoCal. I was happy the meal could still be tasty 3 hours later. I've had bbq fail after 20min.

Bypass the big name places and give this small business your patronage. The prices are reasonable and the service is efficient and no nonsense. Bravo Terrell. You did not disappoint.
