WOW! I’ve just trimmed maybe 1.5-2 pounds of “extra“ fat and I must say this is one of the prettiest pieces of beef I’ve ever seen! Just got it under Texas rub (basic, basic, basic!) and gently tucked the ends under the handles of the grate. Tomorrow‘s feast will be grand indeed!
Texas Twinkies, maybe some sausages(maybe not) fennel sweet onion creamy gratin, sweet potato crunch. Boonzaaijer Halloween cake for dessert!
I’ve not been this excited about a cook in a very long time! Now, let’s just hope I don’t foul it up!

Added maybe four pounds of coal after twelve hours, as expected, bullet coming back to temp nicely. Going back to bed! I did manage to resist the urge to try to see how delightfully food sexy it (no doubt) looked in the pre dawn light. It smells simply amazing! I can catch a couple more hours sack time! Nothing to do but wait!😉
 
Sacked out for another couple of hours and pulled, wrapped and coolered the brisket, Damn, it’s pretty!
I decided that getting the sides prepped was a good idea so, they are all ready for heat! Yay!!!
1-brisket getting ready to be swaddled into the cooler
2- fennel gratin (fennel, onion, fennel with flour, butter and cheese in between, will top with Panko when it goes in the oven)
3- sweet potato crunch

I’m ready to get this show in the road! I don’t know when I’ve been this excited about spending three hours in the kitchen prepping a feast!

I never would have even conceived of such a feast had it not been for this site! Thank you Chris!

It was a real gem!
If anyone is on the fence about getting one, do it! Special occasion feast you bet! This was a wonderful dinner!

Now, what does one do with some leftover cider doughnut bread pudding?

Apples, maple syrup, butter, splash of brandy and some cream. Nice brunch!
 
Just used some residual heat from the “hearth” to heat some water to clean the grate! No, I was cleaning up some twigs and stuffed them in this afternoon and it fired off pretty well so, I thought what the heck?
I got a little more of the yard tidied up while I cleaned the grate.
