Never!Excellent Eric!! Winter doesn't slow us down!
That's impressive on a kettle in those conditions.held about 230-250 for 10 hours or so in 25⁰ weather.

I’m not loving the lack of real estate that my wsm 18 has.
I had better brisket cooks using the snake with my 22” kettle.
I’m thinking that this one was about 18lbs because I’ve never bought one over 2Olbs.
I was probably too embarrassed to post this pic when cooked this.
It actually did turn out nice in the oven after several hours of smoke.
15 lb and that is tops for my WSMI have done several 25 bl briskets on my 18 WSM with and ball of foil in the middle, but seeing the in your grill is amazing, now I gotta find one.
Yeah 25 lb is a monster unless it's a short monster. 19 was as big as I want to go. I tend to look for 15 to 16 pounders, but the recent wagyu one I did was a 17 -18. When I got it I noticed Costco had quite a few 20 to 22 lb brisket which I thought was odd. The 17 -18 I got was the smallest they hadI have used those Martin and they do work better for lifting the brisket rather than racking ribs.
If my wsm 18 looks this silly with an 18-1/2lb brisket I can’t imagine what a 25 pounder would look likes.
That is an excellent use for that rib rack. I'll remember that suggestion.I use a weber rib rack that is curved under big briskets until they shrink up enough. It doesn't block any heat.
Ive done 19 lb on the 18 wsm without any issue, but that's about the biggest I would try. . Never done anything to protect the ends just wedge it between the grate handles and have the lid interior clean in case it's contacting it
The small Weber rack is actually too narrow to work good for ribs imo, because they flop all over the place but it works decent for supporting a big brisket. In spite of this shortcoming the 18 does an.admirable job with briskets of any reasonable size.
