Easy scallops

I made us scallops last night and it was a winner.
It was an easy recipe I borrowed from Sam the Cook Guy.

PERFECT SCALLOPS (every time)

INGREDIENTS

salt
pepper
garlic powder
butter
olive oil
sea scallops (paper towel dried and room temperatur)

DIRECTIONS
Apply salt, pepper and garlic to both sides of scallops.
Heat butter and olive oil in cast iron pan.
When pan is hot place scallops in for 90 seconds.
Flip scallops for 60 seconds.
Place on cookie rack as they come off stove.
Serve on plates and drizzle remaining utter and oil on the scallops.


His recipe called for a chili sauce and I supplied it but none of us used it after the first bite.
I served this with mini broasted spicy fancy potatoes with a sour cream sauce.
Next time I serve this I will serve with an asparagus side dish.
