14.26 chuck roll on at about 5 this morning. Once it hits 160 or so I plan on foiling it and taking it off at 210-212 or so. I like to cut smaller ones like this in half, large ones into three or four pieces.

Kingsford and four pieces of red oak. I put a piece of bourbon barrell oak on top of the lit coals I dumped in for the Minion start.

They're on, WSM closed up and the Maverick remote thermometer perched on it's mount. Time for some coffee and a nap!

Took 10 hours to reach 170, foiled it and after 6 more hours it hit 214 and felt soft so I pulled it. Came out very good, if I may say so myself. Anyone want a couple tacos?
