Chris - I made your peach-glazed cornish hen recipe tonight except I used a chicken (had one in the freezer) and my kettle (didn't want to clean out the smoker). It was delicious. We made the SYD rub from your recipe (well, the wife did). This will certainly be in our rotation now. Thanks for putting up the recipe and procedure.
