Chicken Naranja

DH made this Saturday for dinner. I can't believe we have had this recipe since 2007 and just got around to making it. It is from a very dear member of my cooking game on the Cooking Light Bulletin Board. He went by the name of "Hammster". Hammster, if you see this, please contact me here. We both enjoyed your recipe very much. ;)

Chicken Naranja

1 chicken (3 lb.) cut into serving pieces
1 cup orange juice
1/2 cup soy sauce
1/3 cup packed brown sugar
1 cup sliced celery
5-10 thin slices fresh gingerroot
2 TB. cornstarch mixed with 1/2 cup water

Arrange chicken skin side in a single layer in large shallow baking dish. Mix orange juice, soy sauce and brown sugar and pour over chicken. Sprinkle ginger and celery around chicken. Bake in preheated 350 degree oven 50 minutes. Remove chicken; stir cornstarch mixture into pan juices. Put chicken, skin side down back in dish. Bake about 10 minutes longer until sauce thickens and chicken is tender.
