Buttermilk mixture, dredge and the crawfish tails. I thought I picked up certified Cajun tails but they are a product of China. San Diego isn't really a mecca for Cajun food so I got what I could.

Tails getting a nice soak in the buttermilk mixture

First batch frying

Made a pot of chili too. Used turkey meat and added pinto, black and kidney beans and the end.

1 Lb of crawfish tails fried up.

Added a layer of remoulade sauce, lettuce, tomato and the tails on some bread they had at the store, They didn't have french bread but this worked out just fine. I didn't try the chili but was told it was good. The Po Boy was outstanding!!
