About monthly, we make burgers on the Genesis (natural) gas grill that is topped with Grill Grates. I like the flat side for getting good browning.
Nolan Ryan brand ground beef 85/15 is my go to, and the SO usually makes 1/3 pound patties.
Last weekend, Kroger had a ton of premade 1/4 pound patties of Nolan Ryan 85/15. We took a chance, and they turned out fine.
Seasoned with S&P (Diamond Crystal Kosher Salt and Coarse Ground Black Pepper from Sams) right before grilling.
Topped some patties with pepper-jack cheese after they were done. Made caramelized onions, and whipped up some special sauce per Sam the Cooking Guy.
Here are some photos of the cook.
You can see in the photo below that the knobs are turned just past half-way. The Grill Grates are so efficient that there is no need to crank it up all the way. I let it preheat with the lid closed, then open it for the entire cooking of the patties to get them brown before the inside is overdone.
If you are a huge crust fan, you can crank it up higher, use a small ball of meat, and smash it thin on the screaming hot grates. The Grill Grates will produce an amazing crust. I went the more traditional route for this cook.
I think I ran them 3 minutes per side to start, then maybe 1 minute more for each. Lid wide open the whole time. Thermapen said 160-65.
Turned the burners to their lowest setting, topped a few patties with pepper-jack cheese, then closed the lid for about 1 minute to get it melted. (I can't grill without my patio clock with a second hand that is visible from the grill; so much easier than messing with the phone timer for short periods.)
Took the meat off. Put buns on face down and closed the lid for 30 secs to a minute to lightly toast. Here they are after flipping over to check.
Made some Lamb-Weston brand frozen fries in the air fryer. They are the best we've found.
Caramelized onions
Special sauce from a smashburger video by Sam the Cooking Guy. Recipe: Mayo (2 parts), ketchup (1 part), Tbsp good mustard, Tbsp or 2 of diced dill pickles, S&P.
We usually have some lettuce on the burgers, but we skipped it this time.
Tasted great. Those are Sara Lee Artesano Buns. Those and Dave's Killer Bread Buns are my favorites. Sara's are usually less expensive and easier to find.
