Made this last weekend. Went in the pit at 9:00 PM at 225 degrees F on Rockwood lump charcoal, came out at 5:00 PM, rested for 90 minutes prior to slicing.
I really had help with the pic, the gent who shot it works magazine production. Bet he could make anybody's look good.
