Brisket Enchiladas

Had some leftover Brisket so I Shredded some up. Stuffed the Enchiladas with the Shredded Brisket & some Mexican Cheese. Topped w/a Red Sauce & Green Onions. Served w/Spanish Rice

Looks great Kemper, Barb and I use leftover Brisket for enchiladas and tacos too, really good.
