I bought a sous vide device recently and have been testing it out, so far so good!
Picked up some steelhead from Costco, although I wish I caught it myself...maybe I'll get one this year.
I started with a salt/brown sugar brine for about 12 hours

In the mini for a couple of hours, started out low at about 130F and ended up around 180 or so using alder and maple chips.

After a couple of hours

Into the water bath for 30 minutes

Finished product

Salmon Caesar with homemade dressing and homemade croutons. The wife loved it and my two boys crushed the salmon.
We enjoyed the results, flavorful brine, smoky but not overpowering, but most of all, very tender and moist!
