Bourbon honey brined chicken


 
it's from Wiviott's Low & Slow - here is his recipe for (2) chickens
1 c warm water
1/2 c bourbon
2/3 cut Morton kosher salt
1/2 c honey
1 tbl grated lemon rind
1 tsp freshly ground black pepper
(combine all that and fill 2 gallon ziplocs, each with 2 chicken halves per bag)
(1) chicken:
1/2 c warm water
1/2 c bourbon
1/3 c Morton kosher
1/4 c honey
1/2 tbl grated lemon rind
1/2 tsp fresh ground peper

Personally, I think 1/2 c bourbon and 1/3 c kosher salt is a great brine with just those 2 ingredients. Dissolve the salt in a sauce pan and then dilute in water. Add the bourbon and chicken halves into a ziploc. Brine overnight.
